What can you do with leftover potatoes? All you can do is make classic potato dumplings. Today I would like to share with you a recipe for another way to make use of potatoes. These are potato crumpets with Parma ham. They are excellent as a dinner dish with salad. I think they would be fine with mushroom sauce. They are still tasty the next day with a bit of horseradish.

They taste fantastic with an afternoon cup of tea. You have to remember to keep the coconut pyramids in a closed box so that they don't dry out and become hard. I rarely have any cookies to put in the box though. They always disappear immediately after baking.
