What can you do with leftover potatoes? All you can do is make classic potato dumplings. Today I would like to share with you a recipe for another way to make use of potatoes. These are potato crumpets with Parma ham. They are excellent as a dinner dish with salad. I think they would be fine with mushroom sauce. They are still tasty the next day with a bit of horseradish.
Ingredients:
0.6 kg of cooked potatoes
1 onion
100g of Parma ham or bacon
1 egg
flour
salt and pepper
oil
Grind up the boiled potatoes with a mincer. Cut the Parma ham or bacon into small cubes and put it into a big frying pan and fry lightly. Fry the Parma ham in a small amount of oil; the bacon doesn't need additional fat. Take it out of the pan and dry the fat away with a paper kitchen towel. In the same fat, fry the chopped onion until it is golden. Mix the potatoes, onion and ham in a bowl. Add egg and flour and mix them up again. Add enough flour to make the mixture soft and so that it doesn't stick to your hands. Finally, put the pastry on a baking board and knead the dough for a while. Form crumpets and fry them until they are slightly brown.
