Although late summer has the promise of autumn, I like the last warm days, when the sun is beating down and you can find fragrant vegetable-fruity treasures in orchards and gardens.


In my opinion the winter (which I don't like ) has already gone on for far too long, so I would like to share with you a recipe for very simple cookies, fragrant with the warmth of the last summer days. Apple mousse, with a hint of cinnamon wrapped in French pastry, looks beautiful and tastes and smells even more beautiful.


I found the recipe in the Lidl on-line cookery book, and its master is Paweł Małecki. In his hands even the most complicated confectionary challenges become yummy desserts. However, this recipe is so simple that I decided to face it. You should try it too. Your family will be delighted.


Ingredients:
1 pack of chilled French pastry
4 apples
60g of brown sugar
6g of cinnamon
25g of butter

Today a proposal for these who appreciate a slightly less sweet dessert. Concededly, I use white chocolate for my dessert, but not too much. The desiccated coconut additionally softens the sweetness of the chocolate mixture, and the slightly sour taste of the blackcurrant preserve makes the flavour a bit more subtle.


My children, who are for me the most strict culinary critics, ate the desert to the last crumb, even though I made an "abatis" with bitter cocoa, which they don't really like.


Ingredients (for 5 people):
400ml of 30% sweet cream
250ml of mascarpone cheese
75g of white chocolate
4 spoons of desiccated coconut
300g of blackcurrants
3 tablespoons of brown sugar
12 oatcakes
1 tablespoon of bitter cocoa

Today I would like to share with you a recipe for super lemon cupcakes. You can serve them with caster sugar, icing or cottage cheese crème. Add some fruit and you have a beautiful dessert.


And why are these cupcakes super? You need very few ingredients and they are so simple that we always have them in the kitchen. They are extraordinarily easy to prepare. The only activity apart from preparing the ingredients is mixing, and most of us can mix very well.


Only 20 minutes in the oven and you can eat. And the taste is also great; intensely lemony and super yummy. You must try them, because it is this kind of dessert which you can prepare when surprised by unexpected guests or when the children would like something sweet. All housewives know that sometimes recipes like this are worth their weight in gold.


Ingredients (12 cupcakes)
cupcakes
2 eggs
125g of flour
100ml of oil
100g of caster sugar
1 vanilla pudding without sugar
1 tablespoon of starch
1 teaspoon of baking powder
lemon peel and juice
1 teaspoon of lemon essence

Sad and dull autumn-winter weather always depresses me. I like the spring warmth, waking greenery and long days. In autumn and winter I don't like the foul weather, snow and early gathering darkness. Only Christmas brings me a bit of comfort. In January, when second by second the days grow longer, a small hope awakens within me. Day by day we get nearer to spring.


To lift my mood I prepared an extremely summery cake. Crusty coconut tart with a cherry orange filling. I sweetened the cake and cherry preserve with xylitol. Due to this the cake is less caloric than it is when baked with white sugar.


Ingredients:
dough
250g of flour
4 tablespoons of xylitol
a hint of salt
2 eggs
120g of butter
40g of desiccated coconut
fruit:
500g of cherries without stones
juice and peel grated from half of orange
4 tablespoons of xylitol
half of teaspoon of cinnamon

Today I would like to share with you a recipe for a dessert which your children can help with. Even pre-schoolers (with a little support) can make them. From experience I know that it is great for children's parties. Every child likes jelly, and it is a good way to sneak in some fruit for reluctant fruit eaters.


For the light version you should use natural yoghurt. I like this dessert best with vanilla fromage frais. My dessert had only two layers: cheese and jelly, but what it looks like depends on your invention and time, because each layer has to set before you add the next one. You may use your favourite fruits, but you should remember that the jelly won't set if you use kiwi or pineapple.

300g of vanilla fromage frais
2 jellies
pieces of fruit
