My children love muffins. This year to give them joy on Children's Day I prepared fluffy, moist muffins with rhubarb, a crunchy crumble topping and lemon icing. They were excellent and everybody, not only the children, liked them.


My children (on the off-chance) saved a couple of the muffins for later and left them for their packed lunch. It is fortunate my children are so far-sighted, because the rest of the muffins disappeared in a flash.


Ingredients (12 muffins)
dough
250g of flour
1 teaspoon of baking powder
half a teaspoon of baking soda
150g of brown sugar
1 teaspoon of vanilla essence
250ml of milk
60ml of oil
1 egg
a pinch of salt
crumble topping
40g of butter
80g of flour
40g of caster sugar

Even during the most intense heat we would like to eat something sweet for dessert. Usually, the first choice is ice-cream. However, even though it is perhaps difficult to believe, sometimes you are fed up even with ice-cream.


In this kind of "difficult" situation you should reach for fruit. Today I would like to share with you a recipe for fruit mousse with a hint of coconut. You should serve it strongly chilled. It is perfectly refreshing and supplements the microelements which we lose when it is hot. The sweetness of the dessert hinges on the degree of ripeness of the fruit. If you don't have perfectly ripe, juicy fruit, you may add a bit of honey or maple syrup.


Ingredients (for 4 people):
1 big mango
1 pineapple
400g of coconut milk
2 tablespoons of lemon juice
honey or maple syrup
fruit for decoration

This recipe for coffee cheesecake has waited for its turn a long time. In winter we wanted heavier and sweeter cakes. The nearer the summer, the lighter our diet becomes, so cakes are also a bit less solid. Cakes with fruit, cheesecakes and cakes that require "no baking" are a great part of this trend.


This dessert, because of the shot of coffee, is better for adult gourmands. For children I recommend using Inka coffee (chicory coffee) or instant cocoa. If you add dry granular coffee to the cheese, you will find small colourful dots in the cheesecake. If you would like to make a smooth cake, dissolve the coffee in a spot of water.

I remember the sweet-and-sour taste of rhubarb from my childhood. My mum made stewed fruit with it and added it to yeasty or shortbread cake. The perennial plant called rhubarb is apparently a vegetable. The rhubarb are used for culinary purposes, and the redder they are, the sweeter they are. Rhubarb contains a lot of potassium, sodium, magnesium, iron, phosphorus, ascorbic acid and beta carotene. Because it is low in calories and high in fibre it is recommended for people who are watching their waistline. You should remember that it also contains a lot of oxalic acid, so it isn't recommended for people who have a problem with kidneys or rheumatism. In the kitchen we use rhubarb until the end of June, because then the petioles become bitter.


Today I used rhubarb to make a tart with a crunchy almond crumble topping. It was yummy, moist, refreshing and excellent for a summer tea party.

Mango - called the fruit of the Gods – has been grown in India for 4 thousand years. We have known them in Europe since the XVI century. According to some people, they may prevent cancer, reduce sugar and cholesterol level in the blood. Additionally, it soothes sore throats and hoarseness. Above all it has an excellent exotic taste, which is difficult to compare with anything else. We like it juicy and ripe raw or as an ingredient of salads and cocktails.


Recently, after cooking I had some French pastry left over and a piece of juicy mango. I added walnuts, white chocolate, a few sesame seeds and made some simple snacks.
