I don't understand why it was so hot in June and every end-of-year school test was thus made doubly difficult. Now the holiday has started, the summer has turned away and is pretending not to be there. 12-15C and rain isn't the kind of weather which children and their parents like. I hope it is the only cold spell during this holiday.

 

To raise my children's spirits I prepared a mellow homemade budino. I made it with coconut and almond milk especially for my son who can't drink cow's milk. A yummy addition to the dish was blackcurrant confiture with a hint of orange.

 

Ingredients (for 2 people)

budino

200ml of coconut milk

200ml of almond milk

100g of white chocolate

1 tablespoon of wheat flour

1 tablespoon of potato flour

1 teaspoon of vanilla essence

confiture

2 fistfuls of blackcurrants

the juice and the peel from half an orange

1 tablespoon of maple syrup

During the school year, every housewife has her own way to deal with the morning quickly, to make breakfast which doesn't take up too much time and which fills small bellies in an efficient and yummy way, allowing them to work for half a day. During the holiday things are different. We can be creative with the contents of the fridge and the question of who wants what for breakfast. But we should be careful with this question, and I think most parents know that. Maybe everybody wants something different, but the contents of the fridge aren't up to the job.


Today I would like to share with you the recipe for one of the best holiday breakfasts. I recommend buckwheat omelette, which without sophisticated ingredients is very tasty. You can enrich it with your favourite ingredients. Wee added ham, fresh pepper, chili pepper and onion.


Ingredients
3 eggs
50g of cooked buckwheat groats
half a red pepper
half a small onion
half a chili pepper
1 teaspoon of butter
3 big slices of ham
1 sprig of rosemary
oil for frying
salt and pepper

Every housewife has her own recipe for "casual guests" cake, "mother-in-law in five minutes" cake and "mom I would like something sweet" cake. Today I would like to share with you the recipe for "something chocolatey fast" cake. In secret I will tell you that I, not my children, really wanted some chocolate cake. My family knows that I like chocolate, which is the remedy for a bad mood and stress. Today I "treated" stress connected with my children's sports camp, because as a protective mum I feel safest when I have the whole family at hand.


There are loads of great things about this cake. As well as the basic fact that it is chocolate cake, you can use any kind of flour, you can use your favourite fruit, and egg isn't an essential ingredient. You don't need to use a mixer, and you have only two bowls and one spoon to wash up. An oven is necessary, and patience, because the cake smells delicious while baking.


Ingredients (20cm cake tin)
100g of flour
100g of wholemeal flour
1 egg
250ml of milk
120g of brown sugar
1 teaspoon of vanilla essence
3 tablespoons of cocoa
80ml of oil
1 tablespoon of cider vinegar
1 teaspoon of baking powder

For my family waffles are a symbol of the summer. During seaside holidays they are a permanent fixture of our afternoon walks. Everybody likes their waffles with different ingredients: with whipped cream, fruit, icing, caster sugar; it's important that the waffles are crunchy and fresh.


There are a few weeks to our seaside holiday, so for the beginning of summer I prepared chocolate waffles at home. I served them with vanilla cream cheese, fresh fruit and chocolate icing. They were excellent. I recommend them!

When in the summer French beans are on the market stands and the price isn't too high, this vegetable is often on our plates. After the initial period of fascination, when we eat everything to the last bean, there comes a time when we are fed up with them. Then it's time for salads.


Salads are an excellent way to use up leftovers. Today I would like to share with you the recipe for a salad with yellow French beans. The fresh cucumber, chili pepper, nectarine and smoked trout tasted great and looked beautiful on our plates with the French beans. I prepared a honey-lemon dip and ... after a while there wasn't any sign of the French beans.

cooked French beans
lettuce leaves
150g of smoked trout
1 nectarine
2 small fresh cucumbers
half a chilli pepper
a fistful of cashew nuts
dip
2 tablespoons of olive oil
1 tablespoon of water
1 tablespoon of honey
2 tablespoons of lemon juice
