Every housewife has her own recipe for "casual guests" cake, "mother-in-law in five minutes" cake and "mom I would like something sweet" cake. Today I would like to share with you the recipe for "something chocolatey fast" cake. In secret I will tell you that I, not my children, really wanted some chocolate cake. My family knows that I like chocolate, which is the remedy for a bad mood and stress. Today I "treated" stress connected with my children's sports camp, because as a protective mum I feel safest when I have the whole family at hand.
There are loads of great things about this cake. As well as the basic fact that it is chocolate cake, you can use any kind of flour, you can use your favourite fruit, and egg isn't an essential ingredient. You don't need to use a mixer, and you have only two bowls and one spoon to wash up. An oven is necessary, and patience, because the cake smells delicious while baking.
Ingredients (20cm cake tin)
100g of flour
100g of wholemeal flour
1 egg
250ml of milk
120g of brown sugar
1 teaspoon of vanilla essence
3 tablespoons of cocoa
80ml of oil
1 tablespoon of cider vinegar
1 teaspoon of baking powder

Heat the oven up to 180C. Cover the cake tin with some baking paper.
Mix the dry ingredients together: both kinds of flour, cocoa, baking powder and sugar. Mix together the rest of the ingredients: egg, oil, milk, vanilla essence and cider vinegar in a separate bowl. Add the dry ingredients to the wet. Put the dough into the cake tin. Put the raspberries on top. Bake for an hour. Sprinkle with the caster sugar before serving.
