Scrambled eggs is one of the most popular dishes for breakfast. Everyone likes their scrambled eggs differently. Some people like well-done scrambled eggs, others not so much. We add onion, bacon, sausages, mushrooms, herbs, and spinach. We could spend a long time listing the various ingredients for scrambled eggs. I prepare scrambled eggs with onion and ham for my children. My husband likes scrambled eggs with mushrooms, whereas I like them with onion and tomatoes. My favourite dish has to be bicolour, meaning that I mix the egg yolks only when the whites are set. I like chives and crunchy buttered rolls with them. I could this breakfast every morning.

When my children go to sport camp I traditionally ask what they want to eat when they get back. Surprisingly, this year they asked for crepes with Nutella. I recently dusted off my old recipes for pastes, humus and other nice additions for bread. Today I recommend a paste with sunflower seeds with some dried tomatoes and black olives. It was yummy, and it was a great change for my sandwiches. One day on Nigella Lawson's TV show I saw an interesting dish: Turkish poached eggs with Greek yoghurt and roasted butter. I decided to recreate this meal. Nigella heated her yoghurt, but I love the contrast between hot eggs and cold yoghurt. You should try Turkish poached eggs. Serve them with crunchy toast or fresh bread. This dish is very easy and tastes excellent, and that is what a leisurely weekend breakfast is all about.
Ingredients (for 2 people)
8 tablespoons of Greek yoghurt
1 clove of garlic
3 tablespoons of butter
2 tablespoons of olive oil
half a teaspoon of sweet paprika
2 eggs
2 tablespoons of chopped chives or dill

It is rather strange that I have only just prepared this breakfast. It is excellent after a heavy Christmas diet with cabbage, mushrooms and roast meat. Eating the millet groats pudding I thought to myself: why didn't I come up with it myself when I was looking for an easy yummy and healthy breakfast?
