Gratineed toasties are one of my daughter's favourite dishes. Usually, I add ham, cheese, gherkins and onion and spice them up with curry powder. Recently, I have gone off ham, so today I added a filling without meat to the toasties. I combined spinach, dried tomatoes and walnuts, but without stretched cheese, toasties don't exist. I replaced ordinary cheese with mozzarella.


You may serve the toasties as a hot supper, or with beetroots or tomato sauce they can be an alternative to traditional soup.


Ingredients:
10 slices of toast bread
2 tablespoons of butter
300g of spinach
3 cloves of garlic
4 dried tomatoes
200g of mozzarella cheese
6 walnuts
salt and pepper

New products and access to a huge amount of recipes from all over the world have made our diet more varied. Despite my best efforts, I sometimes hear the fatal question: "Mum, when will we have sausages for supper?" Even though I try to make sandwiches that don't drive them away from the plate, my children much prefer sausages, crepes or pasta with tomato sauce. I sometimes wonder when they will grow up and change their approach to food and voluntarily try new things.


This time I gave in and prepared sausages for supper. I served them in a different way. My home-made hot-dogs contained cheese, dill pickles, tomatoes, red onion and arugola as well as sausages. My children thought that they were pretty good. My daughter, as usual, poured on such an amount of ketchup that she wouldn't have noticed if there had been a boiled carrot instead of a sausage in the bun.


Ingredients:
4 bridge rolls for hot-dogs
4 sausages
4 slices of cheese
1 red onion
2 dill pickles
1 big tomato

Usually, I don't give the recipe for a whole dish. Sometimes I suggest what in our opinion the main ingredient tastes best with. Everybody has their favourite flavours and side dishes. In our past there were also well established combinations: on Sunday dinner there should be broth, roast chicken, chips and lettuce; we always served frikadellers with potatoes and fried carrots; and we liked beef stew with buckwheat groats and gherkins. However, sometimes it is worth thinking out of the box and trying other combinations. The new quality of the food can surprise us.


Today for a change, the dish is a complete meal. It has everything you need. You may add of course your favourite salad, but it isn't necessary. When my children see fish, they ask me for salad with sauerkraut.


The idea for a fisherman's burger (for this dish is my recipe today) was created on holiday when my daughter ordered a meal with a similar name and she was very disappointed. The fish – which came in a crispy roll ¬- was so heavily spiced that we didn't know if it was a fish or something different. You may use any kind of fresh fish to prepare a fisherman's burger: codfish, hake or pollock, but salmon would be great as well.

Imagine your child has a little guest. He is healthy, doesn't have any allergies or intolerances and is hungry. You would like to prepare something yummy to make him feel good in your home. Usually, tomato soup, sausages with ketchup or spaghetti do the trick. Likewise, crepes and crumpets guarantee success. You can nearly always find a version, sweet or with vegetables, which your guest will relish. However, every mum knows that sometimes you can encounter with wonder a child who doesn't like either ketchup or spaghetti. Let us suppose optimistically that your guest isn't my son Mrugnięcie


Today I propose a recipe for express crumpets in the American style called "pancakes". Sometimes, I don't know why, they are confused with crepes. In contrast to crepes, you have to use baking powder, baking soda or yeast. Pancakes can be prepared with milk, buttermilk or kefir, and are served with maple syrup, yoghurt sauce and with fruit or jam.


Today I chose pancakes with kefir, and my children wanted maple syrup and blueberries. If it wasn't for my lack of time in the morning, pancakes could be an excellent idea for breakfast. In my home it is more suitable for cream tea. I don't know wherein lies their secret, but in my opinion pancakes could be prescribed by the doctor to improve your mood. In times of autumnal depression, I recommend adding a bit (or a bit more than a bit) of whipped cream.

There are as many recipes for scrambled eggs as there are chefs. Everybody has their own secret recipe. Some like to fry them for longer than others. Certain people whisk the eggs in a cup to pour on the pan as a fluffy yellow mass. Others put the eggs directly into the pan and mix when the white is congealed, and on the plate there is a white-yellow dish. Everybody has their own ingredients: onion, sausages, ham, tomatoes, chives. My summer proposal is to add chanterelles to scrambled eggs.


Chanterelles don't contain a lot of goodness. A few vitamins and minerals stack up poorly against other ingredients. We value them most of all for their gentle but expressive taste and for how beautiful they look. They also last a long time, rarely have worms and due to their colour it is easy to find them in the grass.


Serve scrambled eggs with chanterelles with fresh bread for Sunday breakfast and your family will be delighted.
