When I watched an episode of the "Okrasa łamie przepisy" series entitled "Summer memories" by Karol Okrasa, and I heard about a sweet fruit soup served with potatoes I was intrigued. My mum served light, spring fruit soups with noodles only, so I had never tried this version of the soup, and I could already picture my dinner on Saturday.


I thought that my family would welcome the idea for my dinner with enthusiasm, but ... I miscued a bit. Even my husband, who usually applauds my culinary experiments, this time looked with unbelieving eyes and said that it wasn't his taste.


Using the opportunity, I decided to try the recipe and I cooked dinner only for myself. I have to say that the combination of sweet and strong bilberry soup with potatoes is really interesting. I will admit, however, that when I prepared the potatoes with fried onion and bacon, I only managed to save a bit to eat with the soup Mrugnięcie


They were excellent. They tasted even better because recently I have been cooking a lot of groats and rice. I blended the bilberry soup and condensed it with flour. I didn't add any cream. I prefer "clean" fruit soup.


Ingredients:
Soup:
300g of bilberries
sugar
2 tablespoons of lemon juice
1 tablespoon of flour

Inspired by healthy food and using groats in 1001 possible and impossible ways, I prepared my own groats dish. It is excellent for lunch and safe to take to work. You can lock it up in your lunch box and eat it when you would like something tasty. This meal is easy to heat up and it doesn't have such a strong smell. This is important when we share a common space in the office. Prepare your own version of this dish: there are as many opportunities as there are kinds of groats and vegetables. If the only thing you like without meat is desserts, add fried chicken breast, bacon or sausage.


Today I would like to propose a colourful dish. I prepared three versions: red groats with beetroots, yellow groats to which I added pumpkin, and green groats with courgette and peas. If you would like more colorful dishes, mix the vegetables together. It is immensely important not to overdo the vegetables. If they are not crunchy, the dish will lose its character and it won't look nice. And we also eat with our eyes, don't we?


Red groats
Ingredients:
150g buckwheat groats
2 baked beetroots
red pepper
half a red onion
half a chili pepper
1 clove of garlic
2 tablespoons of lemon juice
1 tablespoon of honey
salt and pepper
sesame seeds

In one of the books about hygge – the Danish view on happiness – I read that the fewer ingredients a dish has, the less compromise there is on quality. For most extremely simple dishes it is the key to success. Doesn't bread taste best crunchy with fresh country butter, and aren't tomatoes the best with fresh leaves of basil sprinkled with sun soaked olive oil? We can find many examples of great, simple dishes which are prepared with just a few excellent quality ingredients.


Today I would like to share with you a simple dinner dish, which is excellent as a light supper. Its main ingredients are buckwheat groats, dried tomatoes, feta cheese and basil. A dish composed in such a way is excellent. You can enrich in accordance with your own tastes. I added olives, roast sunflower seeds and a little raw sesame oil.


Ingredients (for 2 people)
100g of buckwheat groats
6-8 dried tomatoes
150g of feta cheese
a fistful of fresh basil
10 olives
3 tablespoons of sesame seeds
2 tablespoons of raw sesame oil

Recently, celebrating Grandpa Day, we visited a restaurant where I ate fantastic cream soup with pepper and tomatoes. It was strong, warming and very tasty.


I decided to prepare my version of this dish. If you have a bit more free time, bake thoroughly the peppers and fresh tomatoes in the oven and peel them. In the less time-consuming version, fry the vegetables in a pan and stew until they are soft. This soup is different but equally yummy. Serve it with your favourite fixings. Today I chose feta cheese and pumpkin seeds. I think it should be great with goat's cheese and parsley or garlic croutons.


Ingredients (for 4 people):
2 sweet red peppers
2 tins of tomatoes
2 cloves of garlic
1 onion
1 tablespoon of butter
1 small chili pepper
1 teaspoon of sweet pepper powder
salt and pepper
feta cheese
pumpkin seeds

Potato pancakes is a classical Polish dish. Fortunately, even during the most difficult times, potatoes, onion and oil have always been in the kitchen. In a few homes they are served with cream and jam, and there is a more satisfying version with meat or vegetable stew. In my home, we ate them simply with sugar.


My pancakes today were supposed to be dry. It was only a partial success because my son intimated that they come into the picture only with caster sugar. This time my daughter gave the sugar a miss. She demolished a whole bunch of pancakes with ... nothing.


For adults I propose something a little different: thick sour cream, smoked trout and dill. They were excellent. Prepare and try them. I recommend them!

1kg of potatoes
half an onion
5 tablespoons of flour
2 tablespoons of natural yoghurt
2 eggs
salt and pepper
oil for frying
on the top: 18% sour cream, smoked trout, dill
