In the entry about the pear meringue cake, I mentioned that meringues aren't my strength. This time I think my baking attempt was successful because I prepared little cookies rather than big meringue layers. My son was as happy as a clam because he really loves meringues. The only problem with the cookies was that I didn't make enough. Next time I'm going to bake a few more.

Pineapple is the common name of the edible pineapple fruit. A pineapple plantation would be amazing to see. I would look for the fruit overhead, but it turns out that pineapples grow quite close to the ground. The big, juicy fruit grows out of a clump of spiky leaves on top of a short stem. The main producers of pineapples are Hawaii, Brazil, Mexico and the Philippines.

The cookies were sitting on a plate. Their smell lured me towards them. They were difficult to ignore. Regrettably, I had prepared them in the morning. I put them on the table to cool down and had to fight against myself. Sometimes unsuccessfully. At last I locked the "bombs" away in a box and in this way I saved a few for my family. The reason for my morning struggle was some very dark, very chocolaty cookies with walnuts and cranberries.

Today something yummy and fine for gourmands and great admirers of desiccated coconut. This dish is golden and crunchy on top, and white, fine and fluffy on the inside. They taste fantastic with an afternoon cup of tea. You have to remember to keep the coconut pyramids in a closed box so that they don't dry out and become hard. I rarely have any cookies to put in the box though. They always disappear immediately after baking.
