When I ask my children what they want for weekend breakfast I always hear, "an egg on the box". In actual fact, it is ham and eggs, and the name of the dish comes from the time when my daughter was two. I have to say that I have got bored of it, so today I prepared a different meal: sweet, baked omelette with fruit and almonds. It is easy and quick to prepare – perfect for a family weekend breakfast.
Ingredients:
2 eggs
90g of flour
120 ml of almond milk
1 tablespoon of brown sugar
1 tablespoon of vanilla sugar
a pinch of salt
half a teaspoon of baking powder
1 teaspoon of oil
decoration:
fruit, almonds, cashew nuts, caster sugar or chocolate icing
Heat the oven to 200C. Put a casserole dish into the oven to warm it up.
Whisk the eggs with the almond milk. Add the sugar, vanilla sugar and salt and whisk for a while. Mix the flour with the baking powder and add it to the egg mixture. Stir thoroughly. Take the casserole dish out of the oven carefully. Spread with the oil and pour the mixture onto it. Bake for 20-23 minutes. Serve at once with fruit, caster sugar or chocolate icing.
