I like to watch Jamie Oliver's programme. His yummy dishes make me want to cook them in my kitchen. Oliver uses basic ingredients and he cooks in such a way that everything seems to be easy. I found the idea for preparing this dish in Oliver's "5 ingredients" programme. I used the idea and basic ingredients. I added my own spices.
I used Bursztyn cheese to spice up the dish with smoked salmon and asparagus spears. This cheese is our latest culinary discovery. Ripened for 6 months, it has a delicate flavour, quite intense fragrance and is excellent for pasta sauces.
Ingredients (for 2 people)
150g of tagliatelle
150g of smoked salmon
1 bunch of green asparagus spears
2 cloves of garlic
a piece of chili pepper
4 tablespoons of grated Bursztyn cheese
2 tablespoons of olive oil
1 tablespoon of lemon peel
2-3 tablespoons of lemon juice
salt, lemon pepper
Boil the tagliatelle al dente. Wash the asparagus spears, cut off the hard pieces and the heads. Cut the stems into thin strips with a vegetable peeler. Dice the rest of the stems. Slice the garlic. Heat the olive oil in a pan, add the diced asparagus and garlic. Heat them for a while. Add the crushed smoked salmon and fry for a while. Add the head and strips from the asparagus. Drain the tagliatelle. Set aside a cup of water for later. Put the hot tagliatelle into a bowl, add a bit of water and add half the cheese. Mix it in until the cheese is melted. Add the salmon with the asparagus, lemon juice and peel, spice it up with salt and lemon pepper and mix them in.
Serve at once with the rest of the cheese.
