What can you serve with a fish or meat dish? Buckwheat, rice, noodles, potatoes… None of these interest me. I was looking for inspiration when a tin of chickpeas caught my eye. I used to prepare a chickpea spread for bread. Necessity is the mother of invention and so I made a quick and tasty vegetable stew. I served it with fried fish and lettuce with vinaigrette.
Ingredients:
1 tin of chickpeas
1 tin of tomatoes (cubed)
1 onion
1 medium stick of celery
2 cloves of garlic
1 green pepper
2 teaspoons of oregano
2 tablespoons of butter
salt and pepper
Slice the onion, garlic and stick of celery. Cut the green pepper into cubes. Heat the oil in a frying pan and lightly fry the vegetables. Add the tomatoes and oregano. Mix in and stew with the lid on for 10 minutes. Add the drained chickpeas. Stew for a further 10 minutes. Finally spice it up with salt and pepper.
