Aside from all the negative effects of the coronavirus epidemic, the best thing in my family is the time we're spending together. We always felt that we were missing this, and now we almost have too much of it. We more often eat meals together, we have time to talk, play board games or watch another episode of our favourite series. If we eat together, we feel as if it was the weekend every day. And if it's the weekend... there must be dessert. Today I offer chocolate cake with blueberries. It is strong chocolatey, plump and moist. It is perfect for relaxing with afternoon tea on a sunny terrace.
Ingredients (bread pan)
180g of flour
100g of brown sugar
3 tablespoons of cocoa
80g of melted butter
1 teaspoon of baking powder
1 teaspoon of vanilla essence
220ml of hot water
half a teaspoon of cinnamon
a pinch of salt
150g of blueberries
1 teaspoon of sugar
1 teaspoon of potato flour
50g of chocolate drops
Heat the oven up to 180C. Cover a cake tin with some baking paper.
Mix the flour, sugar, cocoa, baking powder, salt and cinnamon in a bowl. Mix the melted butter, vanilla essence and hot water in a separate bowl. Add the wet ingredients to the dry and mix them in fast. Put the dough into the cake tin. Wash the blueberries and dry them. Add the potato flour and sugar and mix them in. Put the fruit onto the dough and press them lightly. Bake for 50 minutes. Sprinkle with some caster sugar before serving.
