My family went for a weekend trip to the mountains. I stayed at home, resting and spoiling myself. It was just the way to stay positive as a mum. As a way of spoiling myself I prepared a summer dessert: strawberry tiramisu. It was really delicious and I know that I will prepare it again for the whole family. I prepared an adult version. I soaked some ladyfingers in lemon juice and mixed them up with rum. You can use strawberry liqueur. Unfortunately, I finished the old one from last year and the new one isn't ready yet. However, surprisingly the rum was perfect for strawberries. If you prepare this dessert for kids, just skip the alcohol. Strawberry juice will be enough.
Ingredients:
150ml of 30% sweet cream
150g of mascarpone
1 teaspoon of caster sugar
300g of strawberries
1 tablespoon of maple syrup
1 tablespoon of lemon juice
4 tablespoons of brown rum
100g of sponges
1 tablespoons of cocoa
Clean the strawberries. Leave 4 pieces of fruit for decoration. Slice a few of the strawberries. Blend the rest of the fruit and put it in a sieve to remove the stones. Add the maple syrup, lemon juice and rum to the strawberry juice. Mix them in. Whisk the sweet cream, add the mascarpone and mix them in. Arrange the mascarpone cream, strawberry slices and sponges soaked with the strawberry-rum sauce. The last layer should be the mascarpone cream. Sprinkle the top of the dessert with the cocoa. Decorate with the strawberries and peppermint leaves. Serve cool.
