Today I would like to share with you the recipe for a dessert which needs a little work, but I assure you it is worth it. It isn't difficult, but there are a few stages and you also need time to cool down the dessert in the fridge. You should start to make it the day before so you don't have to look nervously in the fridge, and so the dessert will meet your expectations on the table. You can ask you children to help with most of the work. In the holiday season, especially when it is raining, children get bored. A little work in the kitchen will lessen the boredom a bit.
Ingredients (9 muffins)
bottoms
150g of oreo cookies (opened and without filling)
50g of coconut oil
jelly
150g of raspberries
1 teaspoon of gelatine
1 teaspoon of caster sugar
cheese
200g of ricotta cheese
3 teaspoons of caster sugar
2 teaspoons of lime juice
fruit for decoration
Crush the oreo cookies without the filling and mix them with the melted coconut oil. The consistency should be like wet sand. Fill some moulds with the mixture and leave them in the fridge.
Boil the washed raspberries with the caster sugar until the fruit is soft. Sieve the raspberries to make a smooth texture. Mix the gelatine with the hot raspberry mousse. Leave to cool down. Put the jelly on the bottoms of the muffins. Leave in the fridge. Mix the ricotta cheese with the caster sugar and lime juice. Put the ricotta cheese on the jelly. Decorate with the fruit and peppermint leaves.
