My malabi dessert with fruit

Malabi is an Israeli dessert that looks like our budino. It is sweet, creamy and prepared with rose water or orange flower water. I don't like rose water because of its taste and above all its smell, so I prepared my version of malabi with orange flower water.


In the East this dessert is served with walnuts. I make a mousse with mango for it and decorate it with fruit. I must say that this version is really yummy and very glamorous. If you like the smell of rose water, make the original dessert with it and with walnuts. Maybe only to form your own opinion of it.

 

Ingredients (for 4 people)
400ml of rice-coconut milk
200ml of 30% sweet cream
2 tablespoons of caster sugar
50g of rice flour
1 teaspoon of orange flower water
1 mango
1 teaspoon of gelatine
fruit for decoration


Dissolve the rice flour in half a glass of cold milk. Boil the rest of the milk with the sweet cream and caster sugar. Pour the rice flour mixture into the boiling milk. Boil, stirring intensely to avoid making lumps. Add the orange flower water and boil for a while, stirring constantly. Pour the malabi into some bowls. Cool it down and leave in the fridge. Peel the mango and blend thoroughly. Dissolve the gelatine in a little hot water. Cool down a bit and add to the mango. Mix it in. Pour the mango mixture onto the malabi. Leave in the fridge to harden. Decorate with the fruit before serving.
