My children and my dog love blueberries and they are happy that we can buy them in many shops all year long. It means we can enjoy our favourite fruit, even though we don't have so many when the price goes up when they're out of season.
Today I want to share a recipe for a layered, light dessert with blueberries. It looks amazing and doesn't require a lot of work, and as for the result? You have to try it for yourself.
Ingredients (for 4 people)
200g of blueberries
2 tablespoons of lemon juice
3 tablespoons of maple syrup
200ml of 30% sweet cream
2 teaspoons of caster sugar
3 teaspoons of gelatine
Put the blueberries into a pan, add the lemon juice and maple syrup and boil until the fruit mix is completely soft. Dissolve the gelatine in a small amount of hot water and add it to the fruit. Stir until you have made a smooth mixture. Put 3 tablespoons into some small jars. Leave in the fridge. Whisk the cream with the caster sugar. Add 2/3 of the whipped cream to the fruit mixture and mix it in. Put the mousse onto the fruit layer in the small jars. Leave in the fridge. Decorate the top of the dessert with the rest of the whipped cream, fruit and peppermint leaves. Serve chilled.
