I have told you about my children's favourite cookies and the cakes which my husband can't leave alone. This time I'm going to tell you how to make apple pie - my favourite cake. It smells like my home and is good in all seasons, although it is tastiest when you use fresh autumn apples. My mother used to make "checked apple pie". She cut the dough into strips and made a grid from this on the apples. I like a combination of apples and peaches, so I enrich traditional apple pie with this fruit.
Ingredients:
dough
0.5 kg of flour
1.5 teaspoon of baking powder
230g of sugar
200g of margarine (in Poland e.g. Kasia)
4 tablespoons of cream
apples
1 kg of apples
4 peaches
vanilla sugar
2 tablespoons of brown sugar
Heat the oven up to 180 degrees C (without convection).
Put the flour on a baking board, make a large dimple in the flour and put the other ingredients of the dough inside it. Mince it all with a knife. When you have the consistency of crumble topping you have to knead the dough quickly. Put ¼ of the dough into the freezer. Cover a baking pan (e.g. for a tart) with the rest of the dough so that it also covers the sides of the pan. Bake for 20 minutes. In this time peel the apples and cut them into cubes. Put them into a saucepan, add the sugar, vanilla sugar and 3 tablespoons of cold water. Stew until the apples are soft. Take the stones out of the peaches and slice them. Cool down the baked cake for 10 minutes. Put the apples on top and cover with a layer of peaches. Sprinkle with cinnamon and brown sugar. Cut the frozen dough into thick strips and place on top. Bake at 180 C for 30 minutes. If you don't have fresh fruit, you can use ready apples from a jar and peaches from a tin can.
