So far I have prepared traditional coconut cookies with egg whites, sugar and desiccated coconut. We like them. They are crunchy on the outside and soft inside. We used up all the eggs for our weekend breakfast, so I looked for a recipe for coconut cookies without eggs. Basically, I could have used aquafaba, but I only thought about it when the cookies were already on a plate. I found the recipe for lemon-coconut cookies at www.aniagotuje.pl. The cookies were very yummy and the colourful decoration gave them a spring-like character. I would love it to be spring already.


Ingredients (20 cookies)
100g of desiccated coconut
160g of flour
100g of butter
90g of natural yoghurt
60g of caster sugar
1 teaspoon of vanilla essence
1 teaspoon of lemon zest

Basbousa comes from Egypt. It is also served in Greece, Azerbaijan, Israel, Armenia and other countries of the Middle East. It is made with semolina and aromatised with rose water or water with orange flowers. The ingredients of this dessert are different in every country. I used desiccated coconut and almond in my cake. I also added some lemon juice to make the cake less sweet. It was really yummy, even though it was different from the original.

It is difficult to believe that the carnival is over. I feel like I have only just bought gifts for Christmas, but soon we will be preparing Easter eggs and the Easter basket. Probably the sweetest day of the year is just in front of us. Fat Thursday is usually full of doughnuts and angel wings. Today I would like to share with you a recipe for an easy but excellent dessert for two. The light, sweet mousse with white chocolate made with aquafaba goes well with currant confiture. You can use something different, but I recommend something that is not too sweet.

In winter, especially when it is as grey as it is this year, I need something sweet to make me feel better. Do you think there is anything nicer than the fragrance of a homemade cake? Today I would like to share with you the recipe for crunchy apple pie spiced with vanilla and cinnamon. I put a lot of apricot jam under the apples, thanks to which the cake is slightly sour – in one word: yummy.
