In my home bananas are a difficult subject. They are either eaten just after buying or lie and ripen slowly until they are only good for cocktails or cakes. Fortunately, we like both of these options, so bananas don't go to waste in my home.


Today I tried a new recipe for banana cake with chocolate by Kinga Paruzel. It is not enough to say that this cake was excellent! I won't bake any other kind of banana cake. It was perfect in all particulars: Easy, cheap, and all housewives have all the ingredients in their own kitchen. In addition, it is moist, fluffy and very chocolatey, and it smells beautiful while baking. It has only one fault: it definitely vanishes too fast. But we can sort this out easily. We can bake another cake.


Ingredients (25cm cake tin):
110g of wheat flour
30g of rye flour
2 bananas
2 eggs
150g of brown sugar
2 tablespoons of cocoa
125ml of oil
100ml of thick natural yoghurt
1 teaspoon of baking powder
half a teaspoon of baking soda
a pinch of salt
100 g of dark chocolate

We usually associate fresh pineapple with fruit salad or desserts. A less popular option is to serve this fruit as an ingredient of main meals. Today I would like to share with you the recipe for a dish in which one of the main ingredients is pineapple. I serve it with grilled courgette and pepper and spicy sweet and sour sauce. The dish is excellent with rice and could be a warming proposition for a light winter dinner.


Ingredients (for 2 people)
half a pineapple
1 red pepper
half a courgette
4 tablespoons of minced chives
2 tablespoons of sesame seeds
1 tablespoon of nigella
sauce:
2cm piece of fresh ginger
half a chili pepper
2 cloves of garlic
4 cm piece of leek
Juice and the peel of half a lemon
2 tablespoons of honey
1 teaspoon of potato flour
1 tablespoon of coconut oil

The dough is the secret ingredient of homemade dumplings. Every housewife has her secret recipe which she uses to make a soft and resilient dough. You can prepare the stuffing with everything. Today I have a recipe for my favourite Polish dumplings named "ruskie". The stuffing was made with boiled potatoes, cottage cheese and fried onion.


Until recently ruskie dumplings were brought to us by a friendly lady called Ania. She made a huge amount of dumplings and gave them to her family, neighbours and us. Sometimes she added chopped peppermint for the stuffing. They were great, but we prefer the classical ones without unusual ingredients.


Ingredients
dough
500g of flour
4 tablespoons of oil
250-300 ml of boiling water
a pinch of salt
stuffing
600g of potatoes
200g of cottage cheese
1 onion
1 tablespoon of butter
salt and pepper

There are some products which you can't stop eating. For example, crisps, nuts, small cookies and popcorn at the cinema. It doesn't matter how many you put in the bowl, you have to eat everything. Is it the same for you? On the other hand there are situations when we have to nibble something. It is necessary while reading an exciting book, watching an interesting movie and when meeting your friends.


Today I would like to share with you the recipe for two snacks which are a great alternative to their unhealthy, salty counterparts. They are yummy and easy to prepare. If you would like to make something else, I recommend homemade crisps with kale or finger rolls with French pastry and basil pesto and sesame seeds. In the recipe below I didn't include the amount of ingredients you should use. Use as much as you need to make as many snacks as you think you can eat.

I don't know who came up with the idea that Fat Thursday should be celebrated on Thursday. If for example it were on Saturday, we could prepare something in the kitchen and share the sweet goodies with the family. Unfortunately, this year Fat Thursday will again be on Thursday Mrugnięcie.


Though I have my favourite cake shop, where every year I buy jam doughnuts with a huuuuuge amount of candied peel, this year I'm going to prepare some swift cheese doughnuts. They are best just after frying, crunchy outside and soft inside, quickly sprinkled with lemon icing or caster sugar. I recommend them not only on Fat Thursday. They are excellent for afternoon tea at the weekend.


Ingredients (15 mini doughnuts)
300g of flour
350g of minced cottage cheese
3 tablespoons of caster sugar
1 teaspoon of vanilla essence
1 teaspoon of baking powder
a pinch of salt
oil for frying
caster sugar icing for decoration
