Many people limit the amount of meat they eat or remove it completely from their diet. More orthodox people don't eat animal products at all. My recent unexpected guests are from this group. The visit went on longer than I expected, so I had to make dinner. My husband always complains that I buy too much, but this time he really appreciated it when after 20 minutes we had a colourful, remarkable dish, and I managed to take part in the social meeting (we have an open kitchen) almost all the time. Black pappardelle were beautiful with small tomatoes and chanterelles sauce made from coconut milk. I added a lot of parsley from the balcony herbarium and... everybody was amazed. 600g of black pappardelle
250g of chanterelles
2 shallots
3 cloves of garlic
1 chili pepper
3 twigs of thyme
400ml of coconut milk
150g of cherry tomatoes
6 tablespoons of chopped parsley
2 tablespoons of parmesan (not for vegans)
2 tablespoons of sunflower oil
salt and pepper

My son is not a poor eater. He eats everything he gets, he tries new flavours and develops his palate. We also have a deal: he has to try everything – even dishes he doesn't like, because maybe he will change his mind. Thanks to that, a lot of controversial meals are back on the menu. My son's only weakness when eating is that food disappears reeeeeeeaaaaaaally sssssslooooooowly Mrugnięcie. You probably understand that it is very annoying in the morning, when we have to go to school. For some time I have been looking for dishes that will disappear quickly from my son's plate. Lately I took advantage of my son's love for pancakes. I prepared some small pancakes, which I served with yogurt, fruit and maple syrup. Immodestly I can tell you that it was a perfect shot. The breakfast disappeared fast. For sure it will often be on our table.


Ingredients:
150g of natural yoghurt
1 egg
120g of flour
1 teaspoon of baking powder
1 tablespoon of brown sugar
1 tablespoon of oil
maple syrup, fruit and natural yoghurt for serving

Roulade, aka paupiettes, is stuffing wrapped in meat. Usually it is a big cut of beef, but sometimes I prepare roulades made of turkey. Traditionally the stuffing is bacon, pickled cucumber, onion and sometimes bread crust. The meat is seasoned with mustard, salt and pepper. In Upper Silesia it is often served with cabbage and Silesian potato dumplings. In my home we serve it with beetroot and buckwheat groats. This was the traditional dish I served today to my family. It was delicious!

4 big slices of beef
1 shallot
2 small gherkins
4 big slices of bacon
2 teaspoons of mustard
2 tablespoons of flour
2 tablespoons of oil
salt and pepper

500ml of beef bouillon
100ml of red dry wine

Autumn is coming really quickly and with it the moment I hate – the clocks changing to winter time. This situation ruins my mood before and long afterwards. In the 21st century changing the time makes no sense, so I am waiting for the year when the last week of October won't be associated with longer nights and stealing one hour from the already shortening daytime. Because the media is already telling me that in one month we have to change the time, I decided to cheer myself up and prepare delicious autumn rolls with plums and chocolate. This time I didn't use crumple topping. I decided to decorate them with white chocolate and crumbled pistachios. These subtle in taste, not-so-sweet striped rolls remind me of Tigger from the Winnie the Pooh movies, and they always make me smile.

250g of flour
7g of dry yeast
1 egg
75g of sugar
125ml of milk
40g of butter
a pinch of salt

8 teaspoons of plum stew
8 pieces of white chocolate

Meat and vegetables in curry have always been one of my favourite lunch dishes. Usually I prepare chicken, turkey or duck. This time I found an easy and tempting recipe for cauliflower in yellow curry in one of Jamie Oliver's books. Pineapple pieces are an interesting added ingredient. I changed the ingredients a little bit to suit my family. Jamie's recipes are easy and delicious regardless of whether they are shown in a book or film. I think that everybody can manage to prepare them. This recipe didn't disappoint me. Not that much work, short preparation time and the result was delicious. Add some rice and this easy and satisfying dish is ready Uśmiech

1 tin of chickpeas
1 tin of pineapple
2 tablespoons of yellow curry paste
1 tin of coconut milk
500ml of vegetable bouillon
2 cloves of garlic

2 tablespoons of lemon juice
4cm piece of ginger
1 chili pepper
1 bunch of parsley
1 tablespoon of oil
1 teaspoon of butter
half a teaspoon of curcuma
salt and pepper
